Ground Turkey, Lentil & Brown Rice stuffed peppers

Ingredients
*Turkey, Ground turkey, 93% lean, 8 oz Broth, chicken: College Inn, Light & Fat Free, 50% less Sodium, Chicken Broth, .25 serving Lentils, .5 cup *Brown Rice, medium grain, 2 cup Tomato Paste, .125 cup *Cabot Vermont 50% Light Cheddar Cheese, .5 oz*Bell Pepper 4 wholegarlic and onion
Directions
cook turkey burger
cook lentils
cook brown rice

combine all three with .125 cup (a few teaspoons) of tomato paste, chicken broth, diced onion and garlic

slice peppers down center, remove stems, lay on side, stuff

fill pan with water or additional broth till half way up the peppers, cover with foil, cook 20 minutes at 350,

remove foil, add cheese and cook an additional 5 minutes

Serving Size: makes 8 servings (1/2 stuffed pepper each)
