Tater Turnip Mash, Low Carb

Ingredients
4 medium turnips (tennis ball sized), peeled & cut into 1/2" pieces3 cups tap water2 Tbsp white vinegar1 Tbsp sea salt, divided3 Tbsp Butter3 Tbsp sour cream2 large eggs, whipped1/2 tsp fresh cracked black pepper1/2 oz medium shredded cheddar cheese1/2 oz shredded mozarella cheese1/2 oz shredded parmesan cheeseOptional: Bacon bits
Directions
Preheat oven to 400 degrees (I used my convection setting).

In a larges saucepan, add 1st 3 ingredients & 2 tsp of the salt (reserving 1 tsp for end of cooking seasoning). Bring to a boil, reduce heat & cover. Cook until tender - approx 25 minutes. Meanwhile, mix up cheese in a bowl & set aside.

Drain & add butter after returning to heat. Cook over medium-low heat to reduce liquid, about 2 minutes. Sprinkle with remaining 1 tsp salt & cracked pepper.

Using a hand mixer or food processor, mash turnips. Add sour cream, mix. Add eggs, mix, add about 2/3 of the cheese mixture & lightly mix.

Spread into a 8x8 buttered pan. Spread remaining cheese over the top. Bake at 400 degrees for 30 minutes.
