Sneaky Spinach and Berry Vegan Muffins

1/2 to 1 cup cooked spinach1 and 1/2 cup blueberries3/4 cup apple sauce1/4 cup water2 bananas2 Tbsp flax seed, groundtsp vanillatsp cinammonpinch of: salt, nutmeg, allspice1 1/4 cups flour (rye, whole wheat, etc)3/4 cup oats1/3 cup chopped nuts (walnuts, almonds, seeds even)
-Puree the spinach with the next 4 ingredients (but only use 1 cup of the berries).
-Stir in the flax and vanilla
-In a seperate bowl mix the rest of the ingredients (except the berries and nuts).
-Add the wet mixture and then stir in the berries and nuts.
-Scoop into oiled muffin tins.
-Bake at 400 for 15 minutes.
Serving Size: Makes 12 muffins
