Baked Pork Rind Chicken Tenders

1 lb chicken tenders (plus or minus)1/4 C Heavy Whipping Cream (optional)2 eggs1 C shredded ParmesanItalian Spices Nutritional info per 2oz tender - Actual numbers are somewhat lower since you will not use all of the dry mix or egg.
Preheat oven to 375
In food processor, mix pork rinds, Parmesan, Italian spices. Pour into a shallow bowl. Mix eggs and heavy whipping cream and pour into second shallow bowl.
Dredge each tender through the egg mixture, then cover completely with the dry mix. Place carefully on parchment paper. Bake 10 minutes, then flip and bake another 10.
Line cookie sheet with parchment paper.
Serving Size: makes 4 4-ounce servings
