Chocolate Chip Cookies (with Quinoa and Dates)

Ingredients
6 dates, pitted1/4 cup white quinoa (ground to flour in blender)1 tbsp egg whitepinch salt2 tsp cornstarch1 tbsp coconut oil1/4 tsp vanilla1/4 tsp baking soda
Directions
Blend dates and coconut oil until paste like. Add egg and vanilla, blend until mostly smooth.

In a separate bowl, mix dry ingredients.

Combine wet and dry ingredients, mix until combined.

Make four ball of dough, flatten onto a greased baking pan and bake at 350 for 10 - 12 minutes.
