*Olive Oil, Extra Virgin, 2 tbs*1 med yellow onion, chopped*1 can Diced Tomatoes*1 Bell pepper Red medium, chopped*2 Zucchini, chopped*2 tsp Italian Seasoning*2tsp Garlic minced, in water*1tsp Black Pepper
Heat the olive oil in a medium skillet. Add the onion and saute until the onion is translucent. Add the tomato and red bell pepper. Cook over medium heat and reduce to a sauce like consistency. Add the zucchini and seasoning, and cook till preferred softness.
