Cucumber Caprese

Ingredients
1 lrg Cucumber, Peeled and sliced4 oz Mozzarella Cheese, whole milk, Sliced 2 lrg Red Ripe Tomatoes, sliced 4 Tbsp Balsamic Vinegar2 Tbsp Avocado Oil (or similar)1 Tbsp Fresh Basil, chopped
Directions
Slice the Cucumber, Tomato and Moza (make sure you end up with the same number of each) Layer these on a plate over lapping and alternating, drizzle with oil and vinegar and sprinkle with basil. I like to eat this with one of each slice.
