Thai Chickpea Soup

Ingredients
1 large onion2 red peppers1 green pepper2 garlic cloves4 Tbsp. EVOOcumin to tastecoriander to tastecayenne pepper to taste2 cans or 4 c. chickpeas, drained & rinsed3 cans chopped tomatoes1 c. coconut milk1 c. peanut butter1/4 c. lime juice1 Tbsp. salt1 c. basil
Directions
Saute EVOO, onion, pepers, garlic. Add cumin, coriander, cayenne pepper. Add rest & bring to a boil. Cover & simmer for one hour. Puree half in blender before serving.
