Curried Millet Spinach Soup

1 tsp oil1 med. onion chopped2 cloves garlic minced2/3 cup uncooked millet7 cups water1 lg. potato diced1 lg. carrot chopped2 tomatoes chopped1 tsp fresh ginger, grated or finely minced2 tsp curry powder1 bunch spinach choppedsalt and pepper to taste
serves 5-6 people
Heat oil in pot, add onion and garlic and cook until soft, add millet to toast, about a minute. Add cumin and stir. Add potatoes, carrots and ginger then add the water. Bring to boil then down to a simmer and cover, cook until millet and veggies are cooked then take off the heat and stir in spinach and salt and pepper to taste.
