Faux Corn Bread Muffins, Low Carb

1.5 cups almond flour1/4 tsp salt1/2 tsp garlic powder2 Tbsp baking powder, aluminum free1/3 cup cheddar cheese, shredded2 large eggs, beaten1/3 cup sour cream4 Tbsp melted butter
Preheat oven to 400 degrees & spray muffin pan with coconut oil. Set aside.
Mix almond flour, salt, garlic powder, & baking powder very well. Add in cheese & mix evenly. In a separate bowl or large measuring cup, melt butter in the microwave, set aside. In another bowl, mix eggs & sour cream together.
Using a hand mixer, add eggs/sour cream to the dry ingredients until well mixed. Add melted butter & continue mixing.
Spoon 2 heaping tablespoons into the muffin pan & bake for 10 to 12 minutes.
Serving Size: Makes 12 muffins
