Cheese Souffle

Ingredients
Egg Yolk, 4 large egg white, fresh, 5 large Butter, unsalted, .5 stick *Flour, white, .0938 cup Milk, nonfat, 1 cup *Grey Poupon Dijon Mustard, 6 tsp Gureyere Cheese, 6 oz Salt Pepper
Directions
Preheat oven to 400 degrees. Melt butter and flour. Pour milk in and whisk until it thickens. Add salt, pepper, mustard. Let cool. Add egg yolks.

Whisk egg whites. Add yolk mixture slowly and cheese. Pour into buttered soufflé ramiken and bake for 30-45 minutes at 400F degrees.
