Cosmic Chicken Al Fresco

Ingredients
Bring a pot of water to boil and add 2 oz of spaghetti to the pot. Stir to separate the strands. In frying pan add 1 tsp of olive oil and 1/4 C diced onions. Stir till golden. Add 5 thin sliced mushrooms to pan along with cubed 4 oz of chicken breast. Stir. Chop in large pieces 2 fresh Roma tomatoes & add to pan. Add 1Tbs Italian spices, 1tsp basil and 1/2 tsp garlic to pot. Stir. When spaghetti is al dente, drain & return to cooking pot. Add 3 oz baby spinach to this pot along with the hot chicken mix. Fold together until spinach is wilted. Plate the contents. Add 35 g of Parmesan cheese. Toss. Add grated black pepper to taste.
Directions
Put water for spaghetti on to boil in large sauce pan first. Use heavy frying pan for the topping.
