Chocolate Muffin in a mug

Ingredients
1 egg1 1/2 Tbs golden flax meal1 1/2 Tbs. almond flour1Tbs. unsweetened cocoa powder2-4 tsp Truvia1/2 tsp. baking powder1 Tbs. coconut oil
Directions
1.Crack 1 egg into a ceramic mug and whisk it well with a fork.
2. Add 1 1/2 Tbs. golden flax meal.
3.Add 1 1/2 Tbs. almond flour.
4.Add 1 heaping Tbs. unsweetened cocoa powder.
5. Add 2-4 tsp truvia depending on desired sweetness.
6. Add 1/2 tsp baking powder
7.Add 1 flat Tbs. coconut oil.
8. Stir vigorously.
9. Microwave for 1 minute.Muffin should easily plop[ out of the mug when turned upside down.

    Quick, easy, tasty and gluten free. I gave it a 4 because it was just a little bit dry. I used powdered Stevia rather than Truvia because that is what I had on hand. Thanks, Sherrik4, for the quick breakfast recipe. - 7/1/16
