Half cup egg beaters1/8 cup spinach1/8 cup mushrooms1/4 cup cooked rice1/4 cup baked potato 1 slice of ham1/8 cup low fat cheddar cheese
Saute the muchrooms and spinach to cook them down. bake the potato in whatever way you want. Cook rice normally. Portion all of the ingredients out as specified in as many extra large muffin tins as you want to make. Bake in the oven at 350 degrees for ten minutes or until set.
