Slow Cooker Turkey Stroganoff

Ingredients
4 cups sliced mushrooms2 stalks celery, skliced thin2 medium shallots or 1/2 small onion, chopped1/2 tsp. dried thyme, crushed1/4 tsp. black pepper2 cups reduced sodium chicken broth (should have been 1 cup)2 turkey tenderloins, or turkey breast or boneless, skinless chicken thighs (10 oz.), cut in bite size chunks4 TB whole wheat flour (should have been tsp.)1/2 cup fat free sour cream1/4 tsp. salt1-1/3 cup whole wheat, eff-free, wide noodles
Directions
Prepare all ingredients.

1. Spray large skillet with nonstick cooking spray. Add mushrooms, celery and shallots (or onions). Cook over medium heat, stirring frequently, 5 minutes or until mushrooms and shallots are tender. Spone into slow cooker. Add thyme, pepper, and chicken broth. Stir. Add turkey and cover. Cook on LOW 5 to 6 hours.

2. About 20 minutes before serving, stir flour into sour cream in small bowl. Sopoon 2 tablespoons liquid from slow cooker into bowl. Stir well. Stir sour cream mixture into slow cooker. Cover. Cook 10 minutes more. Add salt, if desired.

3. To serve, spoon 1/2 cup cooked noodles onto each of 3 plates. Top with i/3 of turkey mixture.
