Easy Black Beans, Rice & Veggies

Ingredients
1/2 c jasmine rice1/2 c mixed vegetables (corn, carrot, peas, string beans)1/3 c black beans, rinsed1/2 c diced fresh tomato1/4 c shredded cheddar2 T salsa1 T lite sour cream
Directions
Cook rice according to package. Heat vegetables in microwave. Rinse and drain beans. Layer on plate: rice, beans, vegetables, tomato and cheese. Heat in microwave until cheese is melted and dish is heated through. Stir in salsa and sour cream.

You can make about 4 servings from one can of beans and freeze them for future use. Just leave out the salsa and sour cream and add those when you reheat the dish.
