* Mahatma Brown Rice, 1/2 cup uncooked * Red Ripe Tomatoes, 1 cup, chopped * Beans, red kidney, 1.5 cup * Spinach, fresh, 3 cup * Olive Oil, 1 1tsp * Onions, raw, 1 tbsp chopped * Salt, 0.25 tsp
Directions
Cook rice for ~40 minutes
Stir in beans, tomatoes, spinach, and seasonings. Cook 5-10 minutes longer until rice is tender.
