Beef Barley Stew

Ingredients
• 6 slices bacon, diced• 1 tablespoon olive oil• 1 1/2 pounds stew beef, cut into small pieces• 3 tablespoons flour• 1/2 teaspoon salt• 1/8 teaspoon pepper• 8 ounces sliced mushrooms• 1 cup sliced celery• 1 1/2 cups chopped onion• 6 cups beef broth• 1 cup pearled barley• 2 cups sliced carrot 1 can Cream of Mushroom Soup Better then Boullion to taste
Directions
Crisp bacon and crumble. Add all ingredients except barley and bullion. Simmer for 1 hour. Add barley and bullion. Cook for 20 minutes. Turn off and let sit for 2 hours in order for the barley to absorb remaining liquid.
