Laurie's Tortilla Soup

Ingredients
2 chicken thighs-skin and bone removed1/2 cup onion diced2 cloves garlic1/2 cup red sweet pepper1 can Margaret Holmes Tomatoe, Corn and Okra, or 1 can corn and 1 can diced tomatoesOne can diced tomatoes with green chiliesI can black beans3 cups chicken brothcilantro for garnishcheddar cheese for toppingavocado for topping
Directions
Cook chicken thighs in dutch oven or large fry pan. Add onion, peppers and garlic until translucent. Add tomatoes, chilies, corn and beans. Add broth and allow to cook down for 15-20 minutes on medium heat. Garnish with cilantro, cheese and avocado and tortilla chips or strips.
