Pureed Asparagus Soup

Ingredients
1 Tablespoon Coconut Oil1 cup chopped onion (I used Vidalia)6 - 8 cloves garlic, minced6 cups low sodium chicken broth5 cups asparagus, chopped1 cup celery, chopped (include stalks and leaves - celery leaves add the BEST flavor)salt, pepper, lemon juice to taste
Directions
Melt 1 TB coconut oil in large stock pot. Add chopped onion and minced garlic, cook until onion is soft. Add 4 cups of the chicken broth, along with celery and chopped asparagus. Let this simmer until asparagus is soft. Using a hand blender, blend soup, adding additional broth as needed. Add salt, pepper, and a splash of lemon juice.
