VS's Quinoa Salad

Ingredients
1 cup of dry quinoa1 red bell pepper1 orange bell pepper1 cup red kidney beans (any kind of bean will do)4 tbsp raw scallions4 tbsp EVOO2 tbsp white vinegar1/2 tsp sea salt1/8 tsp black pepper
Directions
Cook quinoa.
Drain once done and rinse with cold water.
Chop up peppers, and scallions.
Make vinaigrette with olive oil, vinegar, sea salt & pepper.
combine all ingredients and chill prior to serving.
