100 gr dry bulgur, cooked and cooled2 carrots, cubed250 gr cherry tomatoes265 gr kidney beans, drained can weight265 gr chick peas, drained can weight285 gr corn, drained can weight100 gr raisins1 cup cubed red pepper1TBL olivve oil2TBL balsamic vinegarjuice 1 lemonsalt, pepper to taste
Serves 8
Make sure bulgur is cooked and drained, all canned veggies drained too. Make salad dressing in bottom of big bowl and add all drained, chopped ingredients and salt and pepper to taste and toss well. Great healthy lunch or side dish.
