Buttermilk Spoon Bread Based on a Theme by Paganini

2 c. water1 c. yellow cornmeal2 t. salt1/2 stick butter1 c. buttermilk3 large eggs, separated1 3/4 t. baking powder1/4 t. baking soda
Preheat the oven to 400 degrees
Bring the water to a boil, and add the cornmeal slowly. Stir continuously over medium heat until smooth and the lumps are gone. Take off the heat and add the butter to melt. Stir in the buttermilk and beat with a hand mixer until smooth. Beat in the egg yolks one at a time and then beat in the soda and baking powder. Beat the egg whites until they are stiff, and fold them into the cornmeal mixture. Bake in a Pyrex casserole or round bowl until a tester comes out clean. Eat while warm and enjoy.
