Ingredients
10 small eggplants 1 inch dice (4-5 cups when sauted)1.5 Tb olive oil3 Tb Tamari soy sauce2 Tb Oyster sauce4 Tb natural unsweetened creamy peanut butter1 Tb Rice Vinegar1 C chicken broth1 Tb minced ginger root1-2 Tb Hoisin sauce2 cloves garlic, mincedSiracha to taste
Directions
Heat olive oil in skillet over medium heat. add eggplant and cook until soft, stirring occasionally
meanwhile mix all the other ingredients in a bowl when eggplant is soft add sauce and cook until sauce thickens, about 5 minutes.
