Paul and Shelli's California Omelet

Ingredients
Green Peppers (bell peppers), 1/4 cup choppedTomato, grape, 9, choppedGreen Onion, 1 sliced, Mushrooms, fresh, 2 medium, chopped Spinach , 1 cup choppedEgg White--All Whites 100% liquid egg whites, 1 cupMilk, 1/8 cupCheese, 3 ozavocado, 1, sliced
Directions
Saute peppers, tomatoes, onions, mushrooms in a little olive oil. Add chopped spinach and toss until wilted. in a bowl, whip egg whites with milk until frothy and then add to frying pan. Sprinkle cheese on top and cover. Cook over med heat until eggs show cooked on the top. Add sliced avocado onto half the omelet and fold in half. Sprinkle with remaining cheese and cover but remove from heat. Let stand for a few minutes until cheese if fully melted.

Serving Size: makes 1 large omelet - half per serving
