Carrot, Apple and Ginger Soup

Ingredients
Half a large onion roughly chopped1 Tbs olive oil1 clove of garlic diced2 tsp ginger root3 medium carrots roughly chopped1 apple cored and chopped2 vegetable stock cubes600ml water
Directions
Saute garlic, onion and ginger in olive oil. Add remaining vegetables and stock. Bring to boil then simmer until the vegetables are tender. Allow to cool a little and puree until smooth. Add salt and pepper to taste. Serve.

Serving Size: Makes 2 large bowls. For a starter this could serve 4.
