Hearty Tomato Basil Soup

Olive Oil Spray1/4 cup chopped yellow onion1 small garlic1/4 cup chopped carrot1 bay leaf1/4 tsp red pepper flakes1/2 cup low sodium canned white beans1 cup low sodium diced canned tomatos1 cup low sodium chicken broth1tbsp chopped fresh basil
1. heat a saucepan over edium high heat and spray with olive oil
2. add the onion, garlic, carrot, bay leaf, and red pepper flakes. saute for 4 to 5 minutes, until the onion and carrot are tender.
3.add the tomatoes, beans, and chicken broth. bring to a boil, then turn the heat to low and simmer for 15 minutes
4.remove from the heat and let cool slightly. remove the bay leaf and add the basil.
5. pour into a blender or food processor and blend until smooth.
6. reheat in the same pan and enjoy.
