Caribbean beans and rice

2 cups long grain brown rice1 can Bush's black beans, rinsed1 cup chopped green peppers1/2 cup chopped red onion1 can pineapple tidbits, juice reserved
1. Cook the rice according to package directions, substituting the reserved pineapple juice for an equal portion of the water
2. When there is about 10 minutes left for the rice, saute the peppers and onion in 2 tsp of margarine.
3. Drain the beans and rinse well to remove excess sodium.
4. Add the beans, pineapple, peppers and onions to the rice; mix well to combine.
Makes 4 servings.
