Healthy Egg Salad

Ingredients
3 hard boiled eggs, chopped3 hard boiled egg whites, chopped1/4 cup non fat, plain greek yogurt2 tbs dill pickle relish2 tbs each diced red pepper, celery & onion2 tbs apple cider vinegar1 tsp Dijon mustard1 tsp honey mustardsalt & pepper to taste
Directions
Place chopped eggs, yolks, onions, peppers, celery and relish in a bowl. In another bowl mix yogurt, mustards and vinegar together. When thoroughly combined stir into bowl with eggs etc. Add salt and pepper to taste if desired. Spread on to whole wheat bread or English muffins for a tasty sandwich.

Serving Size: Makes approximately 4 servings for sandwiches.
