Salmon Cakes

Ingredients
Step 13 c. (two 14.5 oz. cans) wild salmon1 c. cooked wild rice6 T. heavy cream2 T. mayonnaise2 organic eggs1 tsp. mustard˝ tsp. salt˝ tsp. black pepper or a dash of cayenne pepper1/3 – ˝ c. fresh dill or parsley, choppedStep 2˝ - 1 T. olive oil˝ c. green bell pepper, diced˝ c. onion, diced
Directions
Preheat oven to 350 degrees. Mix together all of the ingredients from step 1 and let stand.

Sauté vegetables from step 2 in olive oil until tender. Mix with salmon mixture.

Place parchment paper on a baking sheet. Spread 1 T. of olive oil on paper. Form 6 patties and place on baking sheet.

Bake in a 350 degree oven for 30-40 minutes (until golden brown and firm).
