Mediterranean Omlette

Ingredients
Egg, fresh, whole, raw, 2 largeAthenos Reduced Fat Feta CheeseButter, unsalted, .5 tbspMushrooms, fresh diced, 5 sliceYellow Bell Pepper diced, 1 serving equals 1.8 oz or about 10 strips, .25 serving*Yellow Onion diced, .25 cupCherry Tomatoes diced, Fresh, 1 Tomato, 1 serving
Directions
Sautee veggies except tomato in melted butter until fragrant. Transfer to bowl. Scramble egg and add to pan the veggies cooked in. Once the egg begins to set sprinkle in feta cheese and top with veggies. Fold egg in half. Let cook for 2 minutes then flip and cook an additional 2 minutes or until desired doneness.

Top with tomato and sprinkle with salt, pepper and thyme.
