Low Carb Buffalo Chicken Soup

2 T butter, unsalted32 oz - chicken broth (homemade recommended!)1 - chicken breast, cooked and shredded1 - package shirataki Miracle Rice1/4 cup - chopped onion2 - medium carrots, peeled and chopped1/4 cup - chopped celery (optional)1 - clove garlic, minced2 - tsp Hidden Valley Ranch dressing mix (or your own)1/2 cup - parmesan cheese, grated1/2 cup - cheddar cheese, shredded1/2 cup - blue cheese (optional)
Melt butter in large pan over medium heat.
Add drained and rinsed miracle rice, onion, celery, and garlic, cook 2 minutes until lightly softened and fragrant.
Add carrots and ranch dressing powder. Stir well and cook for 5 minutes, or until carrots are slightly softened.
Add broth, chicken, parmesan cheese, and cheddar cheese.
Bring to a simmer and simmer 10 minutes, or until the carrots are cooked through.
Serve with blue cheese sprinkled on top.
