Crock Pot Thia Chicken Soup

3 cups coconut milk 2 cups chicken stock2 Tbs red curry paste2 Tbs fish sauce2 Tbs brown sugar2 Tbs creamy peanut butter2+lbs chicken breasts, cut into 1 1/2 inch pieces1 red bell pepper, seeded and sliced into 1/4 inch slices½ to 1 jalapenos, seeded and chopped (I only put ½ of 1 jalapeno)1/2 onion, thinly sliced1-2 tsp ground ginger1/2 tsp red pepper flakes (more to add spiciness)Add ½ hour before done:1 cup frozen peas (I used peas and carrots)Add just before serving:1 tablespoon lime juice
Put all ingredients EXCEPT for peas and lime juice in crock pot. Cook on LOW 7.5 hrs.
Add peas and cook 30 min more.
Just before serving add lime juice.
Serve over rice.
