Rabsperry Chipotle Turkey Legs

sweet yellow onion, raw (1 medium onion), 2 serving Turkey Leg Meat, 907 grams (2 lbs) 1 Chipotle Pepper in 1 Tbsp Adobo Sauce, 1 serving Apple juice, unsweetened, .33 cup Balsamic Vinegar, 1.5 tbsp
The time given on this recipe is for stovetop cooking, but it can be made in a slow cooker (about 3 to 4 hours).
Place the pepper in adobo with the apple juice and vinegar in a blender and blend until smooth
Slice the onion into rings
Sweat the onion in a dutch oven
Add the turkey meat
Cook lightly
Add about three quarters of the raspberry sauce.
Cook for about half hour covered and then uncovered until the sauce is thick and dark.
Serving Size: makes about 5 or 6 servings depending on serving size and/or the appetite of the diners
