Meatloaf Low Carb No Sugar Ketogenic

Ingredients
2 lbs Full Fat Ground Beef (or half Beef and have Turkey)2 Large Organic Eggs1/2 cup Red Onion (chopped fine)1/2 cup No Sugar Ketchup1/2 cup No Sugar Applesauce1 tsp Garlic powder (or garlic crystals)1 tsp Italian seasoning1 tsp White pepper (or black)1/2 cup Chia Seeds1/2 cup Water1/2 cup Portobello mushrooms (chopped small)
Directions
Combine all the ingredients together in a large bowl. Mix with your hands until well mixed. Place in 13x9 inch lined (or sprayed with olive oil) baking dish and make into a loaf shape. You can put some additional no sugar Ketchup on top with a basting brush.

Bake at 350 degrees for one hour. Cool for 5 minutes before serving. Makes 10, 3 oz. servings.

    I followed the recipe exactly, it was 100 deg after 1 hr so I let it cook for 1hr 45 min (I have never seen a meatloaf cook in 1 hour). it was soupy after 1 hour but It eventually solidified/caked at 1 hr 30 min...it was delicious but fell apart easily. I will make it again. - 4/3/16
