Ingredients
1/2 c. Quinoa1/4 t. Black pepper1/8 t. Turmeric1 t. Dijon mustard1/2 c. 2% shredded cheddar3/8 c. Plain, nonfat Greek yogurt1 c. diced tomatoes, no salt added, liquid drained
Directions
Cook quinoa according to package directions. Stir in all other ingredients, continue cooking until heated through. Enjoy!
