Citrus and Avocado Salad

1/2 cup bulgar & red quinoa blend (I use Central Market)1 avocado, peeled, seeded, and chopped4 clementines, peeled and sectioned2 jalapeno peppers, seeded and cut into thin stripsDRESSING:3 Tbsp extra virgin olive oil1/4 tsp each ground cumin and paprikaJuice of 1 lime3 Tbsp chopped cilantro to garnish
1. Prepare bulgar/quinoa according to package directions.
2. Combine cooked bulgar/quinoa, avocado, clementines, and jalapeno in a large bowl.
3. Combine the dressing ingredients in a small bowl and stir well. Pour thr dressing over the salad and toss gently. Cover the salad and refrigerate for 15 minutes.
Serving Size: makes 6 servings
