2 teaspoons olive oil2 boneless, skinless chicken breast halves6 scallions, thinly sliced and separated by color2 teaspoons grated fresh ginger3 tablespoons chicken broth2 tablespoons teriyaki sauce
1. Heat oil in a small, heavy-bottomed skillet over medium-high heat. Season chicken breasts with salt and pepper. Brown chicken on both sides, about 3 minutes per side.
2. Add scallion white parts and ginger. Cook for 1 minute, stirring. Add broth and teriyaki sauce. Bring to a simmer and cook until chicken is cooked through, about 3 minutes.
3. Remove pan from heat, stir in scallion greens and serve.
