Chicken Corn Soup with Hominy

Ingredients
4 stalks celery, diced4 carrots, diced2 medium onions, diced2 tbsp olive oil8 c water1.5 lbs chicken breast, diced2 lb bag frozen sweet corn2 cans hominy2 hard boiled eggs, slicedsalt & pepper to taste
Directions
Heat olive oil in large soup pot. Add carrots, celery and onion. Saute about 5 minutes. Stir in chicken and cook about 5 minutes, until chicken is white. Stir in water. Add corn and hominy, cook about 20 minutes. Stir in egg. Season to taste.
