Ingredients:Fish, Swai Fillet, 2 - 4 oz filletsAsparagus, fresh young, 7 spearsTomato, grape (3oz = appro 12 tomatoes), 3 oz *Chesapeake Bay Style Seasoning (Old Bay), 1 tspParmesan Cheese, grated, 2 tbspButter, unsalted, 1 pat (1" sq, 1/3" high)Limes, .5 fruit (2" dia)
Directions
on a large sheet of foil, place 1 fillet, sprinkle with old bay seasoning. layer on asparagus spears and sliced grape tomatoes. sprinkle with parmesan cheese. layer on second fillet, sprinkle with seasoning, squeeze of lime juice, a pat of butter, parmesan cheese and slices of lime. seal up in a foil packet and place on a medium high heat for about 25 minutes.
