1/3 cup almond flour or almond meal1/3 cup brown rice flour2 Tbsp natural unsweetened cocoa powder1 tsp cinnamon1/2 tsp baking sodapinch of sea salt8 ounces (267 grams) dark chocolate (70% cacao), chopped1/3 cup extra virgin olive oil2 eggs1/3 cup grade B maple syrup1/3 cup brown sugar, packed1 tsp vanilla extractOptional: nuts, your choice. (I don't add them)
Preheat oven to 350 degrees and oil a 9x9 pan.
In a bowl, stir the dry ingredients together (almond flour, rice four, cocoa powder, cinnamon, baking soda, salt).
In a small pan on low heat, melt half the chocolate pieces, stirring often. Remove from heat when smooth, and stir in olive oil. Then add vanilla.
In another bowl, whisk eggs until frothy. Slowly whisk in maple syrup and sugar until smooth. Add the chocolate mix, continuing to whisk. Then, add the dry ingredients. Last, add the remaining chocolate. Now is the time to add nuts if you like them.
Pour batter into prepared baking pan. Bake at 350 for 25 minutes, or until toothpick comes out clean. Cool to room temperature in the pan, and store in an air-tight container in the fridge.
