Rice Pudding

Ingredients
8 cups skim milk2 and 2/3 cups water2/3 cup sugar1 cup (dry) Arborio rice3 tablespoons butter1 tablespoon vanilla extractcinnamon as desired
Directions
Bring milk, water and sugar to a boil. Add rice and bring back to boil. Reduce heat to a simmer. Stir every 10 minutes to prevent scorching. It will be done when the liquid is becoming thick (and be careful because right around then, the rice will begin to stick to the bottom of the pan). Turn the heat off, and add butter and vanilla. Ladle pudding into containers with lids. Sprinkle with cinnamon. Cool before placing lids on and refrigerate. Good warm or cold. Will keep in refrigerator for several days if it lasts that long in your home! Enjoy!
