Roasted Veggie Pitas

Ingredients
1 small onion, sliced thinly1 zucchini, sliced1 summer squash, sliced1/4 cup mushrooms, sliced (fresh or canned will do)Olive Oil, 2 tbspMozzarella Cheese, 1/4 cupWhole wheat pita bread
Directions
MAKES ENOUGH TO FILL 4-6 PITA HALVES, depending on how full you fill them.

1. In a bowl combine all the ingredients except the mozzarella and the pita bread.
2. Toss veggies to coat evenly with the olive oil, i added some salt and pepper here.
3. Spread on baking sheet and cook at 450 for around 8-10 minutes.
4. Sprinkle cheese over veggies and cook for 1-2 more minutes, until the cheese is melted.
5. Stuff your pitas and enjoy!

    I did eggplant and green pepper instead of mushrooms and put it in a wrap instead of a pita. Delicious! - 7/18/14
