Chicken and Summer Squash Packets

Ingredients
FoilSalt and Pepper4 boneless chicken breasts or 3 tenders per packet1 medium onion sliced or chopped2 T.Dijon Mustard1 small zucchini cut into 1/4 slices1 small yellow summer squash cut into 1/4 slicesCombine these spices or Use your own Combination!3/4 t dried basil1/8 t garlic powder1 T Light butter1 T. grated Parmesan Cheese ( reduced fat)
Directions
Flatten Chicken and sprinkle with salt and pepper
CUT eight 15x12 rectangles of foil to make four packets
Divide onion to 4 rectangles
TOP with chicken with mustard and the veggies. Combine the seasonings and sprinkle over veggies and dot with butter. Fold foil around and form a packet. Bake @ 450 for 25-30 mins. Sprinkle with Parmesan cheese. Yield 4 servings Reduce or Increase Depending on servings desired.

    This sounds delicious, and I used to make a variety of it on a camp-fire with my Scouts. However, the calories here seem a bit off - under 25 calories per serving?? - 8/10/09

    I made this last night, I love it! I seasoned mine with some Mrs. Dash Onion and Herb seasoning, and instead of dotting it with butter, I used a few spritzes of spray butter. This is a recipe I plan to use often, and I'll also try experimenting with different seasonings. - 8/10/09

    Sounds delicious, and definitely great for the squash overload in a garden... but the calories are actually about 250 a serving, not 25... don't know how that happened. - 7/20/11
