Turkey Meatloaf

Ingredients

2 lb. extra lean ground turkey breast1/2 c. diced onion1 c. diced celery2 large egg whites or 1/3 c. liquid egg whites2 T tamari (fermented soy sauce)2 cloves garlic, mincedsea salt and black pepper or other seasoning to taste. (I use Riley's All Purpose Seasoning.)
Preheat oven to 375 degrees F.
Combine all ingredients in a large mixing bowl. Use hands to "knead" together until well mixed.
Prepare a loaf pan by spraying with non-stick spray or coating with other non-stick coating, such as olive oil.
Cover with aluminum foil and bake for one hour or until meat thermometer inserted in the center reads 165 degrees F.
Let rest for 10 minutes. Slice into 8 pieces and serve.
Serving Size: 8 slices, approx. 1 in. thick
