Crab Stuffed Tilapia

Ingredients
1 T onion powder1 rib celery1/8 c dried parsley1.5 c dry stuffing mix1 T olive oil2 T lemon juice1 (8oz) bg chunk style imitation crab1/8 T cayenne6 tilapia, thawed1 T paprika1/2 c (+) water
Directions
Saute celery in oil; remove from heat. Add crab, onion parsley, stuffing mix, lemon juice, water and cayenne. Mix well, adding water as needed; set aside.
Using kitchen shears, cut 3/4 of the way down the center of the tilapia fillet (towards the thinner end). Place 1/4c of filling on the thinner side of fillet. Lay the thicker side over one side of filling to close fillet. Sprinkle with paprika. Bake in 9x13 greased dish for 20 minutes, or until done.
