1 Cup Bulgur (cracked wheat)1.5 Cups Boiling Water1/2 Cucumber chopped1 Medium Tomato - Chopped3 Green Onions - chopped - including green3 Tbsp Olive Oil3 Tbsp Lemon Juice3 Tbsp fresh Mint _chopped fine
Mix Bulgur and boiling water in large bowl. Let stand until water is absorbed (about 45 minutes).
Once water is absorbed, add remaining ingredients and mix well. Tastes best after it has been refrigerated for an hour or so.
