Chocolate Cake - Atkins Friendly

125g chopped chocolate8 tbspns butter2 tbspns water3/4 cup splenda or other sugar substitute2 tbspns pure cocoa powder1 tspn vanilla6 eggs
Grease an 8"spring form pan and line with paper.
Melt, chocolate, butter and water over a double boiler. Cool to room temperature.
Add 1/4 cup splenda, cocoa and vanilla stirring til combined
Beat eggs til really thick and fluffy (6 mins at least)
Reduce mixer speed to medium and add the rest of the sugar. Beat another minute to combine.
Fold eggs into chocolate mix.
Pour into pan and smooth the top. Bake 40 - 45 mins in a moderate oven. Cool completely before removing from the tin.
