Cream Mushroom Soup

1tbspn oil2 tbspns chopped shallot10oz or 280g chopped mushroomsherbs to taste14oz or 400ml chicken stock11oz or 300ml water1/2 cup cream1/2 tbspn lemon juice
Cook mushrooms and shallots in oil til lightly browned
Add broth, water, reduce heat and simmer 10 mins.
Remove from heat, puree and add cream and lemon juice. Heat again til hot.
