Buckwheat waffles or pancakes

1 1/2 cups buckwheat flour3 Tablespoon sugar1/2 tsp. salt1 tsp baking soda3 Tablespoons canola oil1 egg (optional)2 cups buttermilk or almond milk
Whisk together the dry ingredients in a large bowl. Pour the oil over dry ingredients and begin mixing, add beaten egg and then add buttermilk or almond milk slowly until well combined. Spray a griddle or waffle iron with non stick spray. Laddle mix unto heated griddle or heated waffle iron; 1/4 c per 4" pancake or 1/2 cup per waffle iron. Flip pancakes when bubbles rise and begin to burst, or remove from waffle iron as per indicator light. Serve with butter and maple syrup or a fruit topping(calories not included)
